A traditional Finnish summer dessert that always hits the spot!
Recipe for Finnish pancakes
1 litre of milk
2 eggs
1/2 tspn of salt
1/2 dl vegetable oil
2 dl barley flour (You can use normal flour as well, if you don’t have this)
3 dl all-purpose flour
Mix all ingredients, let it rest for a few hours (or overnight) in fridge. You can put the mixture into a plastic bottle so it is easy to pour into frying pan. Use some butter or oil for frying the pancakes, flip them over when they don’t look raw anymore, They’re supposed to be quite flat. Serve with jam and whipped cream or with some salty, savory filling. Yummy!
