Description
Finnish pancake (pannukakku) is baked in the oven and is usually rectangular. The batter is milk-based and contains no raising agent.
The traditional kropsu (or ropsu) from Southern and Central Ostrobothnia can be made with barley flour, and it can be either a sweet treat or a savory dish served with meat, for example. Sweet pancakes are traditionally served with jam, and can be topped with whipped cream, fresh berries, or ice cream.
The recipe makes enough batter for two pancakes baked in the round cast-iron skillet shown in the picture.
